Make-It Monday: Cauliflower Popcorn



Well I am just stoked to announce that today is my last day of having to go without meat for a week. So I know there are these people called “vegetarians.” Yeah, how do you all live like that exactly? Holy cow. (Ha ha, I so did not plan that pun…)

I’m on the detox stage of the last part of my gut repair diet (which normally takes a body about two months, while I’m nearing my six month mark…) and this phase requires no meat. Y’all, I’m already gluten-free, dairy-free, sugar-free, nut-free, and corn-free and also not allowed to have potatoes, apples, peaches, pineapple, mushrooms, peppers, tomatoes, and any chocolate besides this kind. Among more that’s just too hard to list. And I can only have turkey and chicken for meat. I can, however, now have rice, something I was recently allowed to reintroduce, and I am living on it. (Did you know brown rice seasoned with just salt and pepper is really good? Made that discovery this week.)

All that to say, you better believe I’ve had tomorrow’s dinner planned for days—and you know it’s chicken!

But first I have to get through today. So I wanted to share a recipe that has helped me get through this week of deprivation. (Though trust me, you’ll like it regardless of whether you’re on any sort of diet.) I found it here originally, which I probably found through handy dandy Pinterest.

Cauliflower Popcorn 
(with a bonus variation below)

You'll need:
Chopped up cauliflower (however much you want--about 1/4 of a head is pictured, though I usually do a whole head)
2-4 Tbsp. olive oil (depending on the amount of cauliflower)
about 1 tsp. salt (I use sea salt; amount also depends on how much you're making)

1) Preheat the oven to 425 degrees.
2) Mix the cauliflower in a bowl with the olive oil and salt to coat the pieces.
3) Spread the pieces out on a baking sheet covered with parchment paper.


Why yes, there is indeed broccoli in that picture. We'll get there.

4) Bake for 30-45 minutes depending on how crispy you want the cauliflower. I aim for longer rather than shorter.


Nice and crispy... The black part's the best part.




Now, you can also try this with broccoli!


This was my first time at the broccoli attempt, and I did do those a little too long. While I think the cauliflower needs to go a good 40 minutes or more, the broccoli probably should have gone about 30.


But it was still pretty tasty! Enjoy!

  2. I have to admit, I was really confused how it was possible to make popcorn from cauliflower. Either way, I'm totally intrigued by this recipe, and I'm always looking for new ways to get my kids to eat their veggies (though they really do love them most ways I make them, lucky for me!). I'll have to try this way! :)
    Also, how do you survive (seriously!) with so many dietary limitations?!! You've done a fabulous job finding and making new recipes to keep it fun for yourself (and add yummy new recipes to my "make soon" list) but wow... I'd really have a hard time, especially with the no chocolate part! You amaze me! :)

    1. Hi Alesha! :) Well, I wouldn't say it really tastes like popcorn... :/ But it is quite tasty in its own way! :)

      You know, I'm honestly not sure how I'm doing this! ;) If you'da told me a year ago I'd end up being this-free, that-free, I woulda thought you were crazy. But it's ended up being the best route to try to improve my health, so knowing that it’s helping has really helped me keep going with it, one day at a time. Luckily I've found a couple meals that I've loved enough to eat almost every day to get me through it. And also that one kind of dark chocolate that I can have has really gotten me through. It's my happy thing that I eat every single day. :)

  3. Holy yum! I can't wait to try this. My mom is also going through "dietary insensitivity testing" (or something like that). She is gluten-free, dairy-free, nut-free, tomato-free, garlic-free (though she is reintroducing in it moderation) and many other -free's that I can't remember.     1. Hi Amanda! Thanks so much for stopping by, and I'm so glad you've shared my blog with your mom! Such a crazy diet can be really hard, but it definitely gets easier as it goes on. I've been on the Repairvite diet for about 5 months and then the Clearvite diet for almost a month (they're extremely similar, but not sure if that's what your mom's on--either way, it sounds like we're in the same boat except for garlic). Most of my recipes on here work for my diet (it'll be pretty obvious if it doesn't. ;) but there are even more on my Pinterest--I have several boards dedicated to the Repairvite diet, so feel free to have a look around there too! (link at the top of my blog)
